Ingredients

  • 1 cup Kolam Ponni rice
  • 2 cups water
  • 1 tsp ghee
  • Salt to taste

Instructions

  1. Wash rice thoroughly until water runs clear
  2. Soak rice for 15-20 minutes
  3. Bring water to boil, add salt and ghee
  4. Add rice, cook on high for 2-3 minutes
  5. Reduce heat, cover and cook for 15-18 minutes
  6. Let rest for 5 minutes, then serve

Chef's Tip

This variety has excellent grain elongation, so don't over-soak. Perfect for sambar rice and rasam rice.

  • 1 cup Khichdi Ponni rice
  • ½ cup moong dal
  • 3-4 cups water
  • 1 tsp turmeric powder
  • 2 tbsp ghee
  • 1 tsp cumin seeds
  • Ginger, green chilies, salt

Instructions

  1. Wash rice and dal together until clear
  2. Heat ghee, add cumin seeds
  3. Add ginger, chilies, sauté briefly
  4. Add rice, dal, sauté for 2-3 minutes
  5. Add water, turmeric, salt
  6. Cook covered for 25-30 minutes until creamy

This rice breaks down slightly during cooking, creating the perfect creamy khichdi texture. Serve with ghee and pickle.

  • 2-3 cardamom pods
  • 1 bay leaf
  • Whole spices (optional)

Instructions

  1. Wash rice gently (3-4 times only)
  2. Soak for 20 minutes
  3. Heat ghee, fry cashews until golden
  4. Add cardamom, bay leaf, whole spices
  5. Add rice, sauté for 3-4 minutes
  6. Add hot water, cover with foil then lid
  7. Cook for 18-20 minutes, rest for 10 minutes
